It depends on the course and training institute where you will take the course. Some training companies provide access to SAP software while others don’t.
Of course most of the companies will look for experienced SAP consultants because experienced people can get the job done. You need to look for internships or SAP super user positions to get started in SAP field.
For real-life assignments you should consider getting an internship with one of the consulting companies that implement SAP applications.

Yes, MM is a good start. There are also other related modules such as LE (Logistics Execution) and WM (Warehouse Management) but you can’t learn all of them at the same time. So, I recommend to start with MM. You can find more information about it and further links here: SAP MM.
OK, then I recommend you to focus on one of these modules: MM (Materials Management), QM (Quality Management), SCM (Supply Chain Management).
You can use MASS transaction or LSMW transaction.
